Description

Mini Keto Chocolate Bounty Bars are a must-try treat for anyone following a keto diet.


Ingredients

Scale
  • 1 cup unsweetened shredded coconut
  • 1/2 cup coconut oil, melted
  • 1/4 cup powdered erythritol (or sweetener of choice)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 ounces sugar-free dark chocolate, chopped
  • 1 tablespoon coconut oil (for chocolate coating)

Instructions

  1. In a mixing bowl, combine the shredded coconut, melted coconut oil, powdered erythritol, vanilla extract, and salt. Mix well until all ingredients are fully combined and the mixture is sticky.
  2. Line a small baking dish (about 8×4 inches) with parchment paper. Press the coconut mixture evenly into the bottom of the dish, making sure it’s compact.
  3. Place the dish in the refrigerator for about 30 minutes to allow the coconut mixture to firm up.
  4. Once firm, remove the coconut layer from the dish using the parchment paper and cut it into small bars or squares.
  5. In a microwave-safe bowl, combine the chopped sugar-free dark chocolate and 1 tablespoon of coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth.
  6. Dip each coconut bar into the melted chocolate, ensuring it is fully coated. Place the coated bars back on the parchment paper.
  7. Once all bars are coated, return them to the refrigerator for about 15 minutes to allow the chocolate to set.

Notes

  • For a nutty flavor, add 1/4 cup of finely chopped almonds or walnuts to the coconut mixture before pressing it into the dish.
  • If you prefer a creamier texture, mix in 2 tablespoons of unsweetened almond milk to the coconut mixture before pressing it into the dish.
