Menemen is a simple and delicious Turkish dish made with eggs, tomatoes, and peppers, perfect for breakfast or brunch.

- 4 large eggs
- 1 medium onion, diced
- 1 medium bell pepper, diced (red or green)
- 2 medium tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5-7 minutes, or until the onions are translucent and the peppers are soft.
- Stir in the diced tomatoes, paprika, salt, and pepper. Cook for an additional 5-7 minutes, allowing the tomatoes to soften and release their juices.
- Crack the eggs directly into the skillet over the tomato mixture. Gently stir to combine, being careful not to break the yolks too much. Cook for about 3-5 minutes, or until the eggs are just set but still slightly runny.
- Remove from heat and garnish with chopped fresh parsley. Serve immediately with crusty bread or pita for dipping.
Notes
- For a spicier version, add diced jalapeños or a pinch of red pepper flakes when sautéing the onions and peppers.
- You can also incorporate crumbled feta cheese for a creamy texture and added flavor.
