Melktert is a traditional South African dessert that features a creamy custard filling in a flaky crust, often enjoyed chilled.

- 2 cups milk
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 teaspoon baking powder
- 1 cup water
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or tart pan with butter or cooking spray.
- In a mixing bowl, whisk together the flour, sugar, salt, and baking powder until well combined.
- In another bowl, beat the eggs and then add the melted butter, milk, vanilla extract, and water. Mix until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring until you have a smooth batter.
- Pour the batter into the prepared pie dish.
- If using, sprinkle the ground cinnamon evenly over the top of the batter.
- Bake in the preheated oven for 45-50 minutes, or until the center is set and a toothpick inserted comes out clean.
- Allow the melktert to cool at room temperature for at least 30 minutes before serving. For best flavor, refrigerate for a few hours or overnight.
Notes
- For a twist, try adding a tablespoon of lemon zest to the batter for a citrusy flavor.
- You can also top the melktert with whipped cream or a dusting of powdered sugar before serving for an extra touch of sweetness.
