A delightful Matcha Green Tea Cake that combines the earthy flavor of matcha with a moist and fluffy texture, perfect for any occasion.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon matcha green tea powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- For the frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tablespoons matcha green tea powder
- 2–4 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, matcha powder, baking powder, baking soda, and salt until well combined.
- In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and matcha powder, mixing until smooth. Add milk, one tablespoon at a time, until the desired consistency is reached. Stir in the vanilla extract.
- Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
- Serve immediately or refrigerate for up to 3 days.
Notes
- For a lighter version, substitute half of the butter with unsweetened applesauce.
- For added flavor, fold in ½ cup of chopped white chocolate or macadamia nuts into the batter before baking.
