Description

Crispy Masala Dosa filled with spiced potato filling, perfect for breakfast or a snack.


Ingredients

  • 2 cups rice
  • 1/2 cup split urad dal (black gram)
  • 1/2 teaspoon fenugreek seeds
  • 1 teaspoon salt (or to taste)
  • Water (as needed)
  • 2 tablespoons oil (for cooking)
  • 1 cup boiled and mashed potatoes
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1/4 cup chopped onions
  • 2 tablespoons chopped cilantro
  • 12 green chilies, finely chopped (optional)
  • Lemon wedges (for serving)

Instructions

  1. Rinse the rice and urad dal together in water until the water runs clear. Soak them in enough water to cover for at least 6 hours or overnight. Add fenugreek seeds to the soaking mixture.
  2. Drain the soaked rice and dal. In a blender, combine them with a little water and blend until smooth, forming a batter with a pourable consistency. Transfer to a bowl and let it ferment in a warm place for 8-12 hours or until it doubles in size.
  3. Once fermented, stir in the salt. If the batter is too thick, add a little water to achieve a pourable consistency.
  4. In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, turmeric powder, garam masala, onions, green chilies (if using), and sauté until the onions are translucent. Add the mashed potatoes and cilantro, mixing well. Cook for 2-3 minutes, then remove from heat.
  5. Heat a non-stick skillet or griddle over medium heat. Pour a ladleful of dosa batter onto the skillet and spread it into a thin circle. Drizzle a little oil around the edges and cook until the dosa is golden brown and crispy, about 2-3 minutes.
  6. Place a portion of the potato filling in the center of the dosa, fold it over, and serve hot with lemon wedges and your choice of chutney or sambar.

Notes

  • For a gluten-free option, ensure that the chutney served with the dosa is also gluten-free.
  • Add finely chopped spinach or grated carrots to the potato filling for extra nutrition and flavor.
