Description
Maqluba is a traditional Middle Eastern dish that features layers of rice, chicken, and vegetables, all cooked together for a flavorful and hearty meal.

- 2 cups basmati rice
- 1 pound chicken thighs, bone-in and skin-on
- 1 large onion, chopped
- 2 medium tomatoes, diced
- 1 large eggplant, sliced into rounds
- 1 large potato, peeled and sliced into rounds
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon allspice
- 1 teaspoon turmeric
- Salt and pepper to taste
- 4 cups chicken broth
- 3 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Season the chicken thighs with salt, pepper, cumin, coriander, allspice, and turmeric. Add the chicken to the pot and brown on all sides, about 8-10 minutes.
- Remove the chicken from the pot and set aside. In the same pot, layer the sliced eggplant and potato at the bottom.
- Place the browned chicken on top of the vegetables, followed by the diced tomatoes.
- Spread the soaked and drained rice evenly over the chicken and vegetables. Pour the chicken broth over the rice, ensuring it is fully submerged.
- Bring to a boil, then reduce the heat to low. Cover the pot and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit, covered, for an additional 10 minutes.
- To serve, carefully invert the pot onto a large serving platter, allowing the Maqluba to fall out in layers. Garnish with fresh parsley.
Notes
- For a vegetarian version, substitute the chicken with chickpeas and use vegetable broth.
- Add nuts like almonds or pine nuts for extra crunch and flavor.
