Description

Maqluba is a traditional Middle Eastern dish that features layers of rice, chicken, and vegetables, all cooked together for a flavorful and hearty meal.


Ingredients

  • 2 cups basmati rice
  • 1 pound chicken thighs, bone-in and skin-on
  • 1 large onion, chopped
  • 2 medium tomatoes, diced
  • 1 large eggplant, sliced into rounds
  • 1 large potato, peeled and sliced into rounds
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon allspice
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 3 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Season the chicken thighs with salt, pepper, cumin, coriander, allspice, and turmeric. Add the chicken to the pot and brown on all sides, about 8-10 minutes.
  4. Remove the chicken from the pot and set aside. In the same pot, layer the sliced eggplant and potato at the bottom.
  5. Place the browned chicken on top of the vegetables, followed by the diced tomatoes.
  6. Spread the soaked and drained rice evenly over the chicken and vegetables. Pour the chicken broth over the rice, ensuring it is fully submerged.
  7. Bring to a boil, then reduce the heat to low. Cover the pot and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
  8. Once cooked, remove from heat and let it sit, covered, for an additional 10 minutes.
  9. To serve, carefully invert the pot onto a large serving platter, allowing the Maqluba to fall out in layers. Garnish with fresh parsley.

Notes

  • For a vegetarian version, substitute the chicken with chickpeas and use vegetable broth.
