Description

Mapo Tofu is a flavorful and spicy dish that combines tofu with ground pork and a variety of seasonings for a delicious meal.


Ingredients

  • 1 pound firm tofu, drained and cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1/2 pound ground pork (or ground beef)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon doubanjiang (spicy bean paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon sesame oil
  • 3 green onions, chopped (for garnish)
  • 1 tablespoon Sichuan peppercorns (optional, for extra heat)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground pork and cook until browned, about 5 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  4. Add the doubanjiang, soy sauce, and sugar to the skillet, stirring to combine.
  5. Pour in the chicken broth and bring the mixture to a simmer.
  6. Gently add the tofu cubes to the skillet, being careful not to break them. Simmer for about 5 minutes, allowing the tofu to absorb the flavors.
  7. Stir in the cornstarch mixture to thicken the sauce, cooking for another 2-3 minutes until the sauce has thickened.
  8. Drizzle with sesame oil and stir gently to combine.
  9. Serve hot, garnished with chopped green onions and Sichuan peppercorns if using.

Notes

  • For a vegetarian version, substitute the ground pork with finely chopped mushrooms or tempeh.
  • For a spicier kick, add more doubanjiang or a splash of chili oil before serving.
