Description

Mango Sticky Rice is a delicious Thai dessert made with glutinous rice, coconut milk, and ripe mangoes.


Ingredients

  • 2 cups glutinous rice (sticky rice)
  • 1 ½ cups coconut milk
  • ¾ cup sugar
  • ½ teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 25-30 minutes, or until the rice is tender and sticky.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar is dissolved, but do not let it boil.
  4. Once the rice is cooked, transfer it to a large bowl and pour about 1 cup of the coconut milk mixture over it. Stir gently to combine. Let it sit for about 15-20 minutes to absorb the flavors.
  5. To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut milk mixture. Garnish with sesame seeds or mung beans if desired.

Notes

  • For a richer flavor, add a teaspoon of vanilla extract to the coconut milk mixture.
  • If you prefer a more tropical twist, try adding a handful of shredded coconut to the sticky rice before serving.
