Description

Mango Sticky Rice is a delicious Thai dessert made with glutinous rice, coconut milk, and ripe mangoes.


Ingredients

  • 2 cups glutinous rice (also known as sweet rice)
  • 1 ½ cups coconut milk
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results. Drain the rice before cooking.
  2. In a steamer basket lined with cheesecloth or a clean kitchen towel, place the soaked rice and steam over boiling water for about 30-35 minutes, or until the rice is tender and sticky.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, but do not let it boil. Remove from heat and set aside.
  4. Once the rice is done steaming, transfer it to a large bowl and pour about 1 cup of the coconut milk mixture over the rice. Stir gently to combine. Let it sit for about 20-30 minutes to absorb the flavors.
  5. To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut milk mixture. Garnish with sesame seeds or mung beans if desired.

Notes

  • For a creamier texture, use full-fat coconut milk.
  • If you prefer a sweeter dish, add more sugar to the coconut milk mixture.
  • You can also substitute mango with other fruits like ripe bananas or strawberries for a different flavor.
