Mango Pomelo Sago is a refreshing dessert from Hong Kong that combines the sweetness of mangoes and the unique flavor of pomelo with chewy tapioca pearls in a creamy coconut milk base.

- 2 ripe mangoes, peeled and diced
- 1 cup pomelo segments, peeled and separated
- 1/2 cup small tapioca pearls
- 2 cups coconut milk
- 1/2 cup sweetened condensed milk
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon salt
- 1 cup water
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium saucepan, bring 1 cup of water to a boil. Add the tapioca pearls and cook according to package instructions, usually about 15-20 minutes, until they are translucent. Stir occasionally to prevent sticking. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
- In a separate bowl, combine the coconut milk, sweetened condensed milk, sugar, and salt. Stir well until the sugar is dissolved.
- In a large mixing bowl, combine the cooked tapioca pearls, diced mangoes, and pomelo segments. Pour the coconut milk mixture over the fruit and pearls, and gently fold to combine.
- Chill the mixture in the refrigerator for at least 1 hour to allow the flavors to meld.
- Serve in individual bowls or cups, garnished with fresh mint leaves if desired.
Notes
- For a creamier texture, you can substitute half of the coconut milk with heavy cream.
- Add a splash of lime juice for a refreshing citrus twist that enhances the flavors.
