Description

A refreshing and zesty low-carb salad featuring shrimp, grapefruit, and avocado, perfect for a light meal.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 large grapefruit, segmented
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon honey (optional for sweetness)

Instructions

  1. In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and let cool slightly.
  3. In a large bowl, combine the grapefruit segments, diced avocado, red onion, and cilantro.
  4. Add the cooked shrimp to the bowl with the other ingredients.
  5. In a small bowl, whisk together lime juice and honey (if using). Pour the dressing over the salad and gently toss to combine.
  6. Serve immediately or chill in the refrigerator for 15-20 minutes for a refreshing taste.

Notes

  • For added crunch, consider adding sliced cucumber or radishes.
  • Substitute the grapefruit with orange or mango for a different flavor profile.
