- 2 cups mixed salad greens
- 1 cup roasted red peppers, sliced (jarred or homemade)
- 8 ounces halloumi cheese, sliced into ½-inch thick pieces
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat a non-stick skillet over medium heat. Add 1 tablespoon of olive oil.
- Once the oil is hot, add the halloumi slices to the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy. Remove from heat and set aside.
- In a large bowl, combine the mixed salad greens and roasted red peppers.
- In a small bowl, whisk together the remaining tablespoon of olive oil, balsamic vinegar, dried oregano, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Top the salad with the warm halloumi slices. Garnish with fresh basil leaves if desired.
- Serve immediately while the halloumi is warm.
Notes
- For added crunch, sprinkle some toasted pine nuts or walnuts on top before serving.
- You can substitute halloumi with feta cheese for a different flavor profile, but the texture will be less chewy.
