- 1 ½ cups almond flour
- ¼ cup granulated erythritol
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ cup unsalted butter, melted
- 1 large egg
- 2 cups fresh rhubarb, chopped
- 1 cup fresh strawberries, hulled and sliced
- ½ cup granulated erythritol (for filling)
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch (or xanthan gum for a lower carb option)
- 3 large egg whites
- ¼ teaspoon cream of tartar
- ½ cup granulated erythritol (for meringue)
Instructions
- Preheat the oven to 350°F. Grease an 8×8-inch baking dish or line it with parchment paper.
- In a mixing bowl, combine almond flour, erythritol, salt, and baking powder. Stir in melted butter and egg until a dough forms.
- Press the mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for 12-15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
- In a medium saucepan over medium heat, combine rhubarb, strawberries, erythritol, lemon juice, and cornstarch. Cook for about 5-7 minutes, stirring occasionally, until the fruit is soft and the mixture thickens.
- Pour the filling over the cooled crust and spread it evenly.
- In a clean mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add erythritol while continuing to beat until stiff peaks form.
- Spread the meringue over the fruit filling, making sure to seal the edges to prevent shrinkage.
- Bake for an additional 10-12 minutes, or until the meringue is golden brown.
- Allow the bars to cool completely before slicing into squares. For best results, chill in the refrigerator for at least 2 hours before serving.
Notes
- For a different flavor, substitute the strawberries with blueberries or raspberries.
- Add a teaspoon of vanilla extract to the meringue for extra flavor.
