Instructions

  1. In a large bowl, combine the coconut milk, lime juice, chili powder, paprika, cumin, cayenne pepper, salt, and pepper. Whisk until well blended.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  5. Remove the chicken from the marinade and add it to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Pour the remaining marinade into the skillet, bringing it to a simmer. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.
