- 1/4 cup unsweetened shredded coconut

- 1/2 cup unsalted butter, melted

- 1 can (13.5 oz) coconut milk (full-fat)
- 1/4 cup granulated erythritol
- 1/4 cup unsweetened shredded coconut

- 1/4 cup cornstarch (or low-carb thickener)
- 3 large eggs
- 1/2 cup heavy whipping cream
- 2 tablespoons powdered erythritol
- 1/2 teaspoon vanilla extract
- Toasted coconut flakes for garnish (optional)
Instructions
- Preheat the oven to 350°F and grease an 8×8-inch baking dish.
- In a mixing bowl, combine almond flour, shredded coconut, erythritol, melted butter, vanilla extract, and salt. Mix until well combined.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake for 10-12 minutes or until lightly golden. Remove from the oven and let cool.
- In a saucepan over medium heat, combine coconut milk, erythritol, shredded coconut, vanilla extract, and cornstarch. Whisk continuously until the mixture thickens, about 5-7 minutes. Remove from heat and let cool slightly.
- In a separate bowl, beat the eggs. Gradually whisk in the warm coconut mixture until fully combined.
- Pour the filling over the cooled crust in the baking dish.
- Bake for an additional 20-25 minutes or until the filling is set. Remove from the oven and let cool completely at room temperature, then refrigerate for at least 2 hours to firm up.
- In a mixing bowl, whip the heavy cream, powdered erythritol, and vanilla extract until soft peaks form.
- Spread the whipped cream over the chilled coconut filling. Garnish with toasted coconut flakes if desired.
- Cut into bars and serve.
