A delicious and guilt-free Low Carb Berry & Vanilla Jello Ring that is perfect for satisfying your sweet tooth without the carbs.


Ingredients

  • 2 cups water
  • 1 cup mixed berries (fresh or frozen, such as strawberries, blueberries, and raspberries)
  • 1 cup sugar-free vanilla gelatin mix
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon sweetener (erythritol or stevia, to taste)
  • 1/2 cup boiling water

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Remove from heat and stir in the sugar-free vanilla gelatin mix until fully dissolved.
  3. Add 1/2 cup of boiling water to the mixture and stir well. Allow it to cool slightly.
  4. In a separate bowl, combine the heavy cream, vanilla extract, and sweetener.
  5. Use a hand mixer or whisk to whip the cream until soft peaks form.
  6. Once the gelatin mixture has cooled to room temperature, gently fold in the whipped cream until fully combined.
  7. In a bundt pan or jello mold, layer the mixed berries at the bottom.
  8. Pour the gelatin and cream mixture over the berries, ensuring they are evenly distributed.
  9. Cover with plastic wrap and refrigerate for at least 4 hours or until set.
  10. To serve, carefully invert the jello ring onto a serving platter. Slice and enjoy!
