- 8 ounces tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup diced tomatoes
- 1/2 cup sliced jalapeños (fresh or pickled)
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1/4 cup sliced green onions
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- On a large baking sheet, spread out the tortilla chips in an even layer.
- In a bowl, mix the black beans, diced tomatoes, chili powder, cumin, salt, and pepper.
- Evenly distribute the black bean mixture over the tortilla chips.
- Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
- Add the sliced jalapeños on top of the cheese.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a couple of minutes.
- Top with diced avocado, sour cream, chopped cilantro, and sliced green onions before serving.
Notes
- For a spicier kick, add diced fresh jalapeños or a drizzle of hot sauce on top before serving.
- To make it vegetarian, substitute the black beans with pinto beans or add grilled vegetables like bell peppers and onions.
