- 2 large russet potatoes
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/4 cup sour cream
- 1/4 cup sliced green onions
- 1/4 cup diced tomatoes (optional)
- 1/4 cup jalapeños (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the russet potatoes, then cut them into thin strips to make fries.
- In a large bowl, toss the potato strips with vegetable oil, salt, black pepper, garlic powder, and paprika until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fries from the oven and sprinkle the shredded cheddar cheese and bacon bits evenly over the top.
- Return the loaded fries to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with sour cream, green onions, diced tomatoes, and jalapeños if desired.
- Serve immediately while hot and enjoy!

- For a healthier option, try baking sweet potatoes instead of russet potatoes.
