Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 3 to 4 tablespoons cold water
  • 1 cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 ½ cups water
  • 3 large egg yolks, beaten
  • 1 tablespoon lemon zest
  • ½ cup fresh lemon juice
  • 2 tablespoons unsalted butter (for filling)
  • 3 large egg whites (for meringue)
  • ½ teaspoon cream of tartar
  • ¾ cup granulated sugar (for meringue)

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine flour and sugar. Add chilled butter and mix until the mixture resembles coarse crumbs.
  3. Stir in egg yolk and cold water, one tablespoon at a time, until the dough holds together.
  4. Shape the dough into a disk, wrap in plastic wrap, and chill for 30 minutes.
  5. Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim the edges.
  6. Prick the bottom with a fork and bake for 15-20 minutes or until golden. Remove from the oven and let cool.
  7. In a saucepan, whisk together sugar and cornstarch. Gradually add water while stirring. Cook over medium heat until thickened.
  8. Stir a small amount of the hot mixture into the beaten egg yolks, then return to the saucepan. Cook for an additional 2 minutes, stirring constantly.
  9. Remove from heat and stir in lemon zest, lemon juice, and butter. Pour the filling into the cooled tart shell.
  10. For the meringue, beat egg whites and cream of tartar in a clean bowl until soft peaks form.
  11. Gradually add sugar, continuing to beat until stiff peaks form.
  12. Spread the meringue over the lemon filling, sealing the edges.
  13. Bake the tart in the oven for 10-12 minutes or until the meringue is golden brown. Let cool before slicing.

Notes

  • For a lighter version, use a graham cracker crust instead of the pastry crust.
  • To add a twist, try incorporating a teaspoon of vanilla extract into the meringue for extra flavor.
