Description

Lamingtons are a delightful Australian treat made of sponge cake coated in chocolate icing and rolled in shredded coconut.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 2 cups shredded coconut
  • 1 ½ cups powdered sugar (for icing)
  • ½ cup unsweetened cocoa powder (for icing)
  • ½ cup whole milk (for icing)
  • 2 tablespoons unsalted butter, melted (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once the cake is cool, cut it into squares (about 2 inches).
  9. To make the chocolate icing, whisk together the powdered sugar, cocoa powder, milk, and melted butter in a medium bowl until smooth.
  10. Dip each square of cake into the chocolate icing, allowing any excess to drip off, then roll the iced cake in shredded coconut until fully coated.
  11. Place the lamingtons on a wire rack to set and let them sit for at least 30 minutes before serving.

Notes

  • For a richer flavor, try adding a teaspoon of instant coffee granules to the chocolate icing.
  • You can substitute the shredded coconut with chopped nuts for a different texture.
