Description

A delicious Lamb Shoulder Mint Gremolata Whipped Labneh Bowl that combines tender lamb with fresh herbs and creamy labneh.


Ingredients

  • 2 pounds lamb shoulder, boneless and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup labneh (or Greek yogurt)
  • 1 tablespoon lemon juice
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pistachios, chopped
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 325°F. In a large oven-safe pot, heat the olive oil over medium-high heat. Season the lamb chunks with salt, pepper, cumin, and smoked paprika. Sear the lamb in the pot until browned on all sides, about 5-7 minutes. Remove the lamb and set aside.
  2. In the same pot, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer. Return the lamb to the pot, cover with a lid, and transfer to the preheated oven. Cook for 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork.
  3. While the lamb is cooking, prepare the whipped labneh. In a mixing bowl, combine the labneh and lemon juice. Whip with a whisk or an electric mixer until smooth and creamy. Set aside.
  4. For the gremolata, mix the chopped mint, parsley, and lemon zest in a small bowl. Set aside.
  5. Once the lamb is done cooking, remove it from the oven and let it rest for 10 minutes. Shred the lamb into bite-sized pieces using two forks.
  6. To assemble the bowl, start with a generous scoop of whipped labneh at the bottom. Top with shredded lamb, and sprinkle with gremolata and chopped pistachios.
  7. Serve warm and enjoy!

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the lamb seasoning.
  • You can substitute the lamb shoulder with beef chuck for a different flavor profile.
