Lamb Kofta Tzatziki Sumac Olive Feta Stack delights your palate!
Ingredients

- 1 pound ground lamb
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon olive oil
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
- 4 whole wheat pita breads
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1 teaspoon sumac
Instructions
- Preheat the oven to 400°F.
- In a large bowl, combine ground lamb, breadcrumbs, onion, garlic, parsley, cumin, coriander, smoked paprika, salt, black pepper, and cayenne pepper. Mix until well combined.
- Form the mixture into small oval-shaped kofta (about 2 inches long).
- Heat olive oil in a large skillet over medium heat. Add the kofta and cook for about 4-5 minutes on each side until browned and cooked through. Alternatively, you can bake the kofta on a lined baking sheet for 20-25 minutes, turning halfway through.
- While the kofta cooks, prepare the tzatziki by mixing Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Adjust seasoning to taste.
- To assemble the stack, warm the pita breads in the oven for a few minutes. Cut each pita in half to create pockets.
- Fill each pita half with kofta, a dollop of tzatziki, cherry tomatoes, olives, feta cheese, and a sprinkle of sumac.
- Serve immediately.
Notes
- For a spicier kick, add chopped jalapeños or a dash of hot sauce to the tzatziki.
- Substitute ground turkey or beef for the lamb if preferred, adjusting seasoning as needed.
