A delicious and spicy stir-fry dish featuring diced chicken, bell peppers, and peanuts, all coated in a savory sauce.

- 2 cups boneless, skinless chicken breasts, diced into 1-inch pieces
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup unsalted roasted peanuts
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 3 green onions, chopped
- 1 tablespoon sesame oil
Instructions
- In a medium bowl, combine the diced chicken, 2 tablespoons of soy sauce, rice vinegar, and cornstarch. Mix well and let marinate for at least 15 minutes.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic, ginger, and red pepper flakes. Stir-fry for about 30 seconds until fragrant.
- Add the diced bell peppers and cook for another 3-4 minutes until they are tender-crisp.
- Return the chicken to the skillet and add the remaining tablespoon of soy sauce and the peanuts. Stir everything together and cook for an additional 2-3 minutes to heat through.
- Drizzle with sesame oil and sprinkle with chopped green onions before serving.
Notes
- For a spicier version, increase the amount of red pepper flakes or add diced fresh chili peppers.
- You can substitute the chicken with tofu or shrimp for a different protein option.
