- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup cooked bacon bits
- 1 cup steamed broccoli florets
- 1/2 cup chopped green onions
- 1/2 cup black olives, sliced
- 1/4 cup butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the russet potatoes thoroughly, then poke several holes in each potato with a fork.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Carefully cut each potato lengthwise down the middle, then use a fork to fluff the insides.
- Add butter, salt, and pepper to the potato insides, mixing until creamy.
- Top each potato with shredded cheddar cheese, sour cream, bacon bits, steamed broccoli, green onions, and black olives as desired.
- Return the loaded potatoes to the oven for an additional 5-10 minutes to melt the cheese, if desired.
- Serve hot and enjoy your delicious kumpir!

- For a vegetarian option, skip the bacon and add more vegetables like bell peppers or corn.
