Description

Indulge in this savory delight of Turkish loaded baked potatoes, known as Kumpir.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup cooked bacon bits
  • 1 cup steamed broccoli florets
  • 1/2 cup chopped green onions
  • 1/2 cup black olives, sliced
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes thoroughly, then poke several holes in each potato with a fork.
  3. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  4. Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  5. Carefully cut each potato lengthwise down the middle, then use a fork to fluff the insides.
  6. Add butter, salt, and pepper to the potato insides, mixing until creamy.
  7. Top each potato with shredded cheddar cheese, sour cream, bacon bits, steamed broccoli, green onions, and black olives as desired.
  8. Return the loaded potatoes to the oven for an additional 5-10 minutes to melt the cheese, if desired.
  9. Serve hot and enjoy your delicious kumpir!
