Description

Kremna Rezina is a traditional Slovenian cream cake made with layers of puff pastry and a rich custard filling, topped with whipped cream.


Ingredients

  • 1 package (17.3 oz) frozen puff pastry, thawed
  • 4 cups whole milk
  • 1 cup granulated sugar
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 400°F. Roll out the puff pastry on a lightly floured surface to fit a 9×13-inch baking dish. Place the pastry in the dish and prick it with a fork. Bake for 20-25 minutes or until golden brown. Allow to cool completely.
  2. In a medium saucepan, combine 3 cups of milk, granulated sugar, cornstarch, and salt. Whisk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble. Remove from heat.
  3. In a separate bowl, whisk the eggs with the remaining 1 cup of milk and vanilla extract. Gradually add the egg mixture to the thickened milk mixture, stirring constantly. Return to heat and cook for an additional 2-3 minutes until thickened. Remove from heat and let cool slightly.
  4. Pour the custard over the cooled puff pastry in the baking dish, spreading it evenly. Place in the refrigerator to chill for at least 2 hours or until set.
  5. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Spread the whipped cream over the chilled custard layer.
  6. Top with the second sheet of puff pastry, pressing down gently. Dust the top with powdered sugar before serving.
