- 1 cup brown lentils, rinsed and drained
- 1 cup long-grain rice, rinsed
- 1 cup elbow macaroni
- 1 large onion, thinly sliced
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (15 ounces) crushed tomatoes
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 3 tablespoons vegetable oil
- 1 tablespoon vinegar
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium pot, combine the brown lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and set aside.
- In a separate pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce heat to low. Cook for about 15-20 minutes until the rice is fluffy and water is absorbed. Fluff with a fork and set aside.
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and cook until golden brown and crispy, about 10-15 minutes. Remove half of the onions and set aside for garnish.
- To the remaining onions in the skillet, add the minced garlic, cumin, coriander, paprika, cayenne pepper, and a pinch of salt and pepper. Cook for 1-2 minutes until fragrant.
- Stir in the crushed tomatoes and vinegar, and let simmer for about 10 minutes, stirring occasionally.
- In a large serving dish, layer the lentils, rice, macaroni, and chickpeas. Pour the tomato sauce over the top and gently mix to combine.
- Garnish with the reserved crispy onions and chopped parsley before serving.
Notes
- For added flavor, consider adding a dash of hot sauce or a sprinkle of lemon juice before serving.
- You can substitute quinoa for rice for a gluten-free option or add sautéed vegetables like bell peppers or zucchini for extra nutrition.
