- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon chili powder (adjust to taste)
- 1 can (14 ounces) coconut milk
- 1/2 cup plain yogurt
- Salt to taste
- Fresh cilantro, chopped (for garnish)
- Cooked basmati rice or naan (for serving)
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chicken or mixed vegetables to the skillet and cook until the chicken is browned on all sides or the vegetables are tender, about 5-7 minutes.
- Sprinkle in the ground coriander, cumin, turmeric, garam masala, and chili powder. Stir well to coat the chicken or vegetables in the spices.
- Pour in the coconut milk and bring the mixture to a simmer. Reduce the heat to low and let it cook for 15-20 minutes, allowing the flavors to meld and the sauce to thicken.
- Stir in the plain yogurt and season with salt to taste. Cook for an additional 5 minutes, ensuring everything is heated through.
- Serve the korma over cooked basmati rice or with naan, garnished with fresh cilantro.
