  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)
  • 1 can (14 ounces) coconut milk
  • 1/2 cup plain yogurt
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice or naan (for serving)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the chicken or mixed vegetables to the skillet and cook until the chicken is browned on all sides or the vegetables are tender, about 5-7 minutes.
  4. Sprinkle in the ground coriander, cumin, turmeric, garam masala, and chili powder. Stir well to coat the chicken or vegetables in the spices.
  5. Pour in the coconut milk and bring the mixture to a simmer. Reduce the heat to low and let it cook for 15-20 minutes, allowing the flavors to meld and the sauce to thicken.
  6. Stir in the plain yogurt and season with salt to taste. Cook for an additional 5 minutes, ensuring everything is heated through.
  7. Serve the korma over cooked basmati rice or with naan, garnished with fresh cilantro.
