Description

Korean Galbi-Jjim is a flavorful dish made with braised short ribs, perfect for a comforting meal.


Ingredients

  • 2 pounds beef short ribs, cut into 2-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup mirin (sweet rice wine)
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 tablespoon minced ginger
  • 1 medium onion, sliced
  • 2 carrots, cut into chunks
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (for garnish)
  • Water (enough to cover the ribs)

Instructions

  1. Preheat your oven to 325°F.
  2. In a large pot or Dutch oven, combine the soy sauce, brown sugar, mirin, sesame oil, garlic, and ginger. Stir until the sugar is dissolved.
  3. Add the short ribs to the pot and toss to coat them in the sauce.
  4. Add the sliced onion and carrot chunks to the pot. Pour in enough water to cover the ribs completely.
  5. Bring the mixture to a boil over medium-high heat. Once boiling, cover the pot and transfer it to the preheated oven.
  6. Braise the short ribs in the oven for about 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  7. Remove the pot from the oven and let it sit for about 10 minutes. Skim off any excess fat from the surface.
  8. Serve the braised short ribs hot, garnished with chopped green onions and sesame seeds.

Notes

  • For a spicier version, add 1-2 tablespoons of gochujang (Korean chili paste) to the sauce.
  • You can also add potatoes or mushrooms during the braising process for added flavor and texture.
