Description

Kolaczki are delightful Polish pastries filled with fruit preserves, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit preserves (apricot, raspberry, or your choice)
  • Powdered sugar for dusting

Instructions

  1. In a medium bowl, whisk together the flour and salt. Set aside.
  2. In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
  3. Gradually add the granulated sugar and vanilla extract, mixing until well combined.
  4. Slowly incorporate the flour mixture into the butter mixture, stirring until a dough forms.
  5. Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 2 hours or overnight for easier handling.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a floured surface, roll out one portion of the chilled dough to about 1/8 inch thick.
  8. Cut the dough into 2-inch squares. Place about 1 teaspoon of fruit preserves in the center of each square.
  9. Fold the corners of each square toward the center, pinching to seal.
  10. Place the filled kolaczki on the prepared baking sheet and bake for 15-20 minutes, or until lightly golden.
  11. Allow to cool slightly, then dust with powdered sugar before serving.

Notes

  • For a nutty twist, add finely chopped nuts to the fruit preserves before filling the dough.
  • You can also experiment with different fruit preserves or even chocolate spread for a unique flavor.
