- 1 pound ground beef or lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Skewers (wooden or metal)
Instructions
- In a large bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, and cayenne pepper if using. Mix well until all ingredients are evenly incorporated.
- Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.
- Preheat your grill or broiler to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Divide the meat mixture into 8 equal portions and shape each portion around a skewer into a long, oval shape.
- Brush the kebabs with olive oil and lemon juice.
- Place the kebabs on the grill or under the broiler, cooking for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
- Remove from heat and let rest for a few minutes before serving.
