Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Skewers (wooden or metal)

Instructions

  1. In a large bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, and cayenne pepper if using. Mix well until all ingredients are evenly incorporated.
  2. Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.
  3. Preheat your grill or broiler to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Divide the meat mixture into 8 equal portions and shape each portion around a skewer into a long, oval shape.
  5. Brush the kebabs with olive oil and lemon juice.
  6. Place the kebabs on the grill or under the broiler, cooking for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
  7. Remove from heat and let rest for a few minutes before serving.
