Description

Kibbeh is a delicious Middle Eastern dish made with bulgur wheat and ground meat, seasoned with spices and herbs.


Ingredients

  • 1 cup fine bulgur wheat
  • 1 pound ground beef or lamb
  • 1 medium onion, finely chopped
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pine nuts, toasted (optional)
  • 1/4 cup olive oil (for frying)
  • 1/2 cup water (for soaking bulgur)

Instructions

  1. Rinse the bulgur wheat under cold water and then soak it in 1/2 cup of water for about 30 minutes, or until it is tender and the water is absorbed. Fluff with a fork and set aside.
  2. In a large mixing bowl, combine the soaked bulgur, ground meat, chopped onion, allspice, cinnamon, salt, black pepper, and parsley. Mix well until all ingredients are thoroughly combined.
  3. If using pine nuts, toast them in a small skillet over medium heat until golden brown, then fold them into the meat mixture.
  4. Preheat a large skillet over medium heat and add the olive oil.
  5. With wet hands, shape the kibbeh mixture into oval or football-shaped patties, about 2-3 inches long.
  6. Fry the kibbeh in the hot oil for about 4-5 minutes on each side, or until they are browned and cooked through. Remove and drain on paper towels.
  7. Serve warm with a side of yogurt or a fresh salad.

Notes

  • For a vegetarian version, substitute the ground meat with cooked lentils or mushrooms.
  • Try baking the kibbeh instead of frying for a healthier option; place them on a greased baking sheet and bake at 375°F for about 25-30 minutes, flipping halfway through.
