Description

Kheer is a traditional Indian dessert made with rice, milk, and sugar, creating a creamy and delightful treat.


Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1 cup sugar
  • 1/2 cup heavy cream
  • 1/4 cup chopped nuts (almonds, cashews, or pistachios)
  • 1/4 cup raisins
  • 1 teaspoon cardamom powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large saucepan, bring the whole milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
  3. Once the milk is boiling, add the soaked and drained rice. Reduce the heat to low and simmer for about 30-40 minutes, stirring frequently until the rice is cooked and the mixture thickens.
  4. Stir in the sugar, heavy cream, cardamom powder, vanilla extract, and a pinch of salt. Cook for an additional 5-10 minutes, stirring until the sugar is fully dissolved.
  5. Add the chopped nuts and raisins, mixing well. Remove from heat and let it cool slightly.
  6. Serve warm or chilled, garnished with additional nuts if desired.

Notes

  • For a richer flavor, you can replace half of the whole milk with coconut milk.
  • To make it vegan, substitute the whole milk and heavy cream with almond milk or coconut milk and use a plant-based sweetener.
