Description

Khachapuri is a traditional Georgian dish that resembles a cheese-filled bread boat, perfect for cheese lovers.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 3/4 cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 large egg
  • 1 tablespoon unsalted butter, melted
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Preheat your oven to 475°F (245°C). Line a baking sheet with parchment paper.
  5. Once the dough has risen, punch it down and roll it out into an oval shape about 1/2 inch thick. Transfer it to the prepared baking sheet.
  6. In a bowl, mix together the mozzarella and feta cheeses. Spread the cheese mixture down the center of the dough, leaving a border of about 1 inch around the edges.
  7. Fold the edges of the dough over the cheese filling, pinching the ends to create a boat shape.
  8. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.
  9. Remove from the oven and make a small well in the center of the cheese filling. Crack the egg into the well and brush the crust with melted butter.
  10. Return to the oven for an additional 5-7 minutes, or until the egg white is set but the yolk is still runny.
  11. Garnish with chopped parsley before serving.

Notes

  • For a spicier version, add a pinch of red pepper flakes to the cheese mixture.
  • You can substitute the feta cheese with ricotta for a creamier texture.
