Ingredients

  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup key lime juice (fresh or bottled)
  • Zest of 2 limes
  • ¼ teaspoon salt
  • Whipped cream, for serving (optional)
  • Lime slices, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
  3. Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let cool slightly.
  4. In a large bowl, whisk together the eggs, sweetened condensed milk, key lime juice, lime zest, and salt until smooth and well combined. Pour the filling over the cooled crust.
  5. Return the baking dish to the oven and bake for an additional 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to fully set.
  6. Once chilled, lift the bars out of the baking dish using the parchment paper overhang. Cut into squares and serve with whipped cream and lime slices, if desired.
