A quick and delicious Keto Tuna Melt Casserole that is perfect for a low-carb meal.

- 2 (5-ounce) cans tuna in water, drained
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 cup diced celery
- 1/2 cup diced onion
- 1/4 cup dill pickles, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 4 large eggs
- 1/4 cup heavy cream
- 1/2 cup crushed pork rinds (optional for topping)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large mixing bowl, combine the drained tuna, mayonnaise, shredded cheddar cheese, diced celery, diced onion, and chopped dill pickles. Mix well until all ingredients are evenly combined.
- In a separate bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, black pepper, and salt until smooth.
- Pour the egg mixture over the tuna mixture and stir until everything is well coated.
- Transfer the mixture to the prepared baking dish, spreading it out evenly. If using, sprinkle the crushed pork rinds on top for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For added flavor, mix in some diced bell peppers or jalapeños.
- To make it more cheesy, sprinkle additional shredded cheese on top during the last 5 minutes of baking.
