- 2 medium zucchinis
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil, for frying
- Fresh cilantro, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice the zucchinis into 1-inch thick rounds. Place them in a bowl and sprinkle with salt, garlic powder, onion powder, and black pepper. Toss to coat evenly.
- Heat olive oil in a large skillet over medium heat. Once hot, add the zucchini rounds in a single layer and fry for about 3-4 minutes on each side until golden brown. You may need to do this in batches.
- Remove the fried zucchini from the skillet and place them on the prepared baking sheet. Use a flat object (like a glass or a spatula) to gently press down each round to flatten them into discs.
- Sprinkle the flattened zucchini with grated Parmesan cheese.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the tostones are crispy.
- Remove from the oven and let cool slightly. Garnish with fresh cilantro if desired and serve with lime wedges.
Notes
- For a spicy kick, add a pinch of cayenne pepper to the seasoning mix.
- You can also serve these tostones with a dipping sauce like guacamole or sour cream for added flavor.
