Keto Toffee Walnuts are a delicious and irresistible treat that combines the rich flavors of toffee with crunchy walnuts, perfect for a low-carb diet.


Ingredients

  • 2 cups walnuts, halved
  • 1 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter
  • 1/2 cup erythritol (or preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium saucepan over medium heat, melt the butter.
  4. Stir in the erythritol, vanilla extract, sea salt, and baking soda until well combined.
  5. Add the walnuts and shredded coconut to the saucepan, stirring until they are fully coated with the toffee mixture.
  6. Spread the mixture evenly onto the prepared baking sheet.
  7. Bake for 10-12 minutes, stirring halfway through, until the walnuts are golden brown and fragrant.
  8. Remove from the oven and let cool completely on the baking sheet. The toffee will harden as it cools.
