Description

Indulge in a creamy Keto tiramisu that tastes just like the Italian original, but with fewer carbs!


Ingredients

Scale
  • ½ cup / 50g Almond flour
  • 3 tbsp / 30g coconut flour
  • 23 tablespoon allulose or sweetener of your choice
  • ¼ teaspoon baking soda
  • â…“ teaspoon cream of tartar
  • 1 ¼ tablespoon whey protein powder
  • 3 large eggs, room temperature
  • 2 tablespoon coconut oil, melted
  • 3 tablespoon almond milk or coconut milk, unsweetened
  • ¾ cup freshly brewed filtered coffee, cooled
  • ¼ cup dark rum or 1 teaspoon rum extract
  • 3 tablespoon allulose
  • ¾ cup mascarpone (200g)
  • 1 ¾ cup double or heavy cream (440g)
  • 2 squares / 20g dark chocolate, grated
  • â…“ teaspoon cacao powder

Instructions

  1. Preheat the oven to 375F / 190C.
  2. Separate the egg whites from the yolks. Cream the yolks with allulose until light and pale.
  3. Whisk the egg whites in a clean bowl until soft peaks form, then gently fold into the yolks.
  4. In another bowl, mix the dry ingredients: almond flour, coconut flour, whey protein, cream of tartar, and baking soda.
  5. Add melted coconut oil or butter, almond milk, and the egg mixture to the dry ingredients and fold until combined.
  6. Line a small baking tray (9 x 6 inch) with parchment paper, pour in the batter, and smooth the top. Bake for about 15 minutes until golden.
  7. Allow to cool before slicing into small squares.
  8. Mix coffee, rum, and allulose in a bowl until dissolved. Toss the sponge squares in the mixture to coat.
  9. In a clean bowl, whip mascarpone and cream until firm. Optionally add sweetener.
  10. Layer the soaked sponge, mascarpone mix, and grated chocolate, repeating for two layers. Top with grated chocolate and/or cacao powder.
