Delicious keto-friendly strawberry donuts topped with a sweet strawberry glaze.

- 1 ½ cups almond flour
- ½ cup coconut flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup erythritol (or preferred keto sweetener)
- 3 large eggs
- ½ cup unsweetened almond milk
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, pureed
- For the glaze:
- ½ cup powdered erythritol
- 2 tablespoons fresh strawberry puree
- 1 tablespoon unsweetened almond milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, combine almond flour, coconut flour, baking powder, salt, and erythritol.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, vanilla extract, and strawberry puree until smooth.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
- Bake for 15-18 minutes or until the donuts are golden brown and a toothpick inserted comes out clean.
- Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- While the donuts cool, prepare the glaze by mixing powdered erythritol, strawberry puree, and almond milk in a small bowl until smooth.
- Once the donuts are cool, dip the tops into the glaze or drizzle it over the donuts.
Notes
- For added flavor, consider mixing in a teaspoon of lemon zest into the batter for a citrusy twist.
- You can also substitute the fresh strawberries with raspberries or blueberries for a different berry flavor.
