Description

Delicious keto-friendly strawberry donuts topped with a sweet strawberry glaze.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup erythritol (or preferred keto sweetener)
  • 3 large eggs
  • ½ cup unsweetened almond milk
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • For the glaze:
  • ½ cup powdered erythritol
  • 2 tablespoons fresh strawberry puree
  • 1 tablespoon unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, combine almond flour, coconut flour, baking powder, salt, and erythritol.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, vanilla extract, and strawberry puree until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
  6. Bake for 15-18 minutes or until the donuts are golden brown and a toothpick inserted comes out clean.
  7. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While the donuts cool, prepare the glaze by mixing powdered erythritol, strawberry puree, and almond milk in a small bowl until smooth.
  9. Once the donuts are cool, dip the tops into the glaze or drizzle it over the donuts.

Notes

  • For added flavor, consider mixing in a teaspoon of lemon zest into the batter for a citrusy twist.
  • You can also substitute the fresh strawberries with raspberries or blueberries for a different berry flavor.
