- 1 pound flank steak, thinly sliced
- 1 cup fresh spinach leaves
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F.
- In a bowl, combine the cream cheese, mozzarella cheese, sun-dried tomatoes, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Lay the thinly sliced flank steak on a clean surface.
- Spread a thin layer of the cheese mixture over each slice of steak, leaving a small border around the edges.
- Place a few spinach leaves on top of the cheese mixture.
- Starting from one end, carefully roll up each slice of steak tightly. Secure with toothpicks if necessary.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the steak rolls and sear for about 2-3 minutes on each side until browned.
- Transfer the steak rolls to a baking dish and bake in the preheated oven for 15-20 minutes, or until the steak is cooked to your desired doneness.
- Remove from the oven and let rest for a few minutes before slicing. Serve warm.

- For added flavor, marinate the flank steak in your favorite low-carb marinade for a few hours before assembling the rolls.
- Try adding different vegetables like bell peppers or zucchini for a variation in taste and texture.
