Delicious and easy Keto Sheet Pan Cookies for a guilt-free treat.

- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup erythritol (or preferred keto sweetener)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined. If using, fold in the sugar-free chocolate chips.
- Spread the cookie dough evenly onto the prepared baking sheet, smoothing the top with a spatula.
- Bake in the preheated oven for 15-20 minutes, or until the edges are firm and the center is set.
- Allow the cookies to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, cut into squares or rectangles and serve.
Notes
- For a chewier texture, try adding an extra egg.
- You can substitute almond flour with coconut flour, but use only 1/2 cup as coconut flour absorbs more moisture.
- For added flavor, consider mixing in chopped nuts or a sprinkle of sea salt on top before baking.
