A delicious and rich Keto Roasted Bone Marrow served with a fresh parsley salad.
Ingredients

- 2 large beef marrow bones (about 6 inches long)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup fresh parsley, finely chopped
- 1 tablespoon capers, rinsed and chopped
- 1 small shallot, finely diced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- Zest of 1 lemon
Instructions
- Preheat your oven to 450°F.
- Place the beef marrow bones upright in a roasting pan.
- Drizzle with olive oil and season with salt and pepper.
- Roast the bones in the preheated oven for 15-20 minutes, or until the marrow is bubbly and starts to pull away from the bone.
- While the bones are roasting, prepare the parsley salad by combining the chopped parsley, capers, shallot, lemon juice, Dijon mustard, extra virgin olive oil, and lemon zest in a medium bowl.
- Toss well to combine and season with salt and pepper to taste.
- Once the marrow is done roasting, remove it from the oven and let it cool for a few minutes.
- Serve the marrow hot, scooping it out with a small spoon and topping it with the parsley salad.
Notes
- For a richer flavor, try adding minced garlic to the marrow before roasting.
- You can substitute the parsley with arugula or mixed greens for a different taste.
