- 2 medium beets, peeled and diced

- 4 cups mixed greens (arugula, spinach, or your choice)
- 1 orange, segmented
- 4 ounces goat cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey (optional, for non-strict keto)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the diced beets with olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet.
- Roast the beets in the oven for 25-30 minutes, or until tender, stirring halfway through. Remove from the oven and let cool slightly.
- In a large salad bowl, combine the mixed greens, orange segments, roasted beets, goat cheese, and walnuts.
- In a small bowl, whisk together the balsamic vinegar, Dijon mustard, and honey (if using). Drizzle the dressing over the salad and toss gently to combine.
