Ingredients

  • 2 medium beets, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 cups mixed greens (arugula, spinach, or your choice)
  • 1 orange, segmented
  • 4 ounces goat cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey (optional, for non-strict keto)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the diced beets with olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet.
