Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • ¼ cup granulated erythritol (or preferred keto sweetener)
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F.
  2. Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  3. In a medium bowl, combine almond flour, cocoa powder, erythritol, and salt.
  4. Pour in the melted butter and mix until well combined.
  5. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
  6. In a large mixing bowl, beat the softened cream cheese and erythritol until smooth and creamy.
  7. Add the vanilla extract and eggs, one at a time, mixing well after each addition until fully incorporated.
  8. Gently fold in the fresh raspberries, being careful not to crush them too much.
  9. Pour the cheesecake mixture over the crust in the baking dish, spreading it evenly.
  10. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  11. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to set completely.
  12. Once chilled, cut into bars and serve.
  13. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
