- ½ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup granulated erythritol (or preferred keto sweetener)
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup unsweetened peanut butter (or almond butter)
- ½ cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, and salt until well combined.
- In a separate large bowl, beat the erythritol and eggs together until light and fluffy. Add the vanilla extract and peanut butter, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until fully incorporated. If using, fold in the sugar-free chocolate chips.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set. The centers may look slightly underbaked; they will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

- For a different flavor, try adding a teaspoon of espresso powder to enhance the chocolate taste.
- You can substitute the peanut butter with sunflower seed butter for a nut-free version.
