- 1 ½ cups almond flour
- ½ cup erythritol (or preferred keto sweetener)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon anise extract (optional)
- 1 tablespoon melted butter
Instructions
- In a mixing bowl, combine the almond flour, erythritol, baking powder, and salt. Whisk until well blended.
- In another bowl, beat the eggs, then add the vanilla extract and anise extract if using. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
- Preheat the pizzelle maker according to the manufacturer’s instructions. Lightly grease the plates with melted butter if necessary.
- Spoon about 1 tablespoon of batter onto the center of each pizzelle mold. Close the lid and cook for about 30-60 seconds, or until golden brown.
- Carefully remove the pizzelle and place them on a wire rack to cool. Repeat with the remaining batter.

- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
