- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/4 cup sugar-free chocolate chips (optional)
- 1/4 cup unsweetened coconut flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, salt, and baking powder. Mix well.
- In another bowl, whisk together the melted butter, eggs, vanilla extract, and peppermint extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the sugar-free chocolate chips and coconut flakes.
- Spread the brownie batter evenly in the prepared baking pan.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the brownies to cool completely in the pan before cutting them into small cubes.
- For an extra touch, you can freeze the brownie cubes for about 1 hour to create a frosty treat.
