Ingredients

  • 1 large shallot, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili flakes (adjust to preference)
  • 5 cups fresh spinach, thoroughly washed and roughly chopped
  • 4 cups chicken or vegetable stock
  • 8 ounces paneer, diced
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Chopped mint leaves for garnish

Instructions

  1. In a spacious saucepan, warm the coconut oil over medium heat. Add the finely chopped shallot and sauté until it becomes soft and translucent, roughly 6 minutes.
  2. Incorporate the minced garlic and ginger, stirring for about a minute until the mixture is aromatic.
  3. Toss in the mustard seeds, garam masala, and chili flakes. Cook for an additional minute, allowing the spices to release their flavors.
  4. Add the chopped spinach to the pan, stirring until it wilts down, which should take about 4-5 minutes.
  5. Pour in the chicken or vegetable stock and bring the mixture to a gentle boil. Lower the heat and let it simmer for 12 minutes.
  6. Blend the soup using an immersion blender until it reaches a creamy consistency. If you prefer, transfer it in batches to a countertop blender for a smoother texture.
  7. Return the pureed soup to the heat and mix in the diced paneer and coconut milk. Allow it to warm through for another 5 minutes, then season with salt and pepper to your liking.
  8. Serve the soup warm, garnished with fresh mint leaves for a refreshing touch.
