- 1 tablespoon coconut oil
- 1 large shallot, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 teaspoon mustard seeds
- 1 teaspoon garam masala
- 1/2 teaspoon chili flakes (adjust to preference)
- 5 cups fresh spinach, thoroughly washed and roughly chopped
- 4 cups chicken or vegetable stock
- 8 ounces paneer, diced
- 1/2 cup coconut milk
- Salt and pepper to taste
- Chopped mint leaves for garnish
Instructions
- In a spacious saucepan, warm the coconut oil over medium heat. Add the finely chopped shallot and sauté until it becomes soft and translucent, roughly 6 minutes.
- Incorporate the minced garlic and ginger, stirring for about a minute until the mixture is aromatic.
- Toss in the mustard seeds, garam masala, and chili flakes. Cook for an additional minute, allowing the spices to release their flavors.
- Add the chopped spinach to the pan, stirring until it wilts down, which should take about 4-5 minutes.
- Pour in the chicken or vegetable stock and bring the mixture to a gentle boil. Lower the heat and let it simmer for 12 minutes.
- Blend the soup using an immersion blender until it reaches a creamy consistency. If you prefer, transfer it in batches to a countertop blender for a smoother texture.
- Return the pureed soup to the heat and mix in the diced paneer and coconut milk. Allow it to warm through for another 5 minutes, then season with salt and pepper to your liking.
- Serve the soup warm, garnished with fresh mint leaves for a refreshing touch.

- For a vegan version, substitute paneer with tofu.
