Ingredients
Scale
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol (or your preferred keto sweetener)
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
- 3 large eggs
- 1/4 cup erythritol (or your preferred keto sweetener)
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt.
- Stir in the melted butter, egg, and vanilla extract until a dough forms.
- Press the dough into the bottom and up the sides of a muffin tin to create tartlet shells.
- Bake for 10-12 minutes until set. Remove from the oven and let cool.
- In another bowl, whisk together heavy cream, eggs, erythritol, nutmeg, and vanilla extract until smooth.
- Pour the custard mixture into the cooled tartlet shells, filling them about three-quarters full.
- Bake for an additional 20-25 minutes, or until the custard is just set.
- Allow to cool completely before serving.
- These tartlets can be chilled in the refrigerator for at least 2 hours for a firmer texture.
Notes
- For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the custard mixture.
- You can also substitute the nutmeg with cinnamon for a different flavor profile.
