Ingredients

  • 1 ½ cups almond flour
  • ¼ cup granulated erythritol
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 cup heavy cream
  • 3 large eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine almond flour, erythritol, and salt.
  3. Stir in the melted butter and 1 egg until a dough forms.
  4. Press the mixture into the bottom and up the sides of a 9-inch tart pan.
  5. Bake for 10-12 minutes until lightly golden.
  6. Remove from the oven and let cool.
  7. In another bowl, whisk together the heavy cream, eggs, vanilla extract, nutmeg, cinnamon, and a pinch of salt until smooth.
  8. Pour the custard mixture into the cooled tart shell.
  9. Bake for an additional 25-30 minutes, or until the custard is set and slightly jiggles in the center.
  10. Allow the tart to cool at room temperature for at least 30 minutes before slicing.
  11. This tart can be served warm or chilled. For best flavor, refrigerate for at least 2 hours before serving.
